Oxidation of amino acids, peptides and proteins. Using the knowledge of the oxidative products formed to probe protein-peptide interactions. The oxidation is done by using hydroxyl radical to paint the side chains of these protein surfaces. This study is essential for age related diseases and the other deleterious effects of oxidants.
