Indian traditional foods with respect to preservation and shelf life studies, applications of newer methods of preservation of traditional foods, preservative free approach and studies in fermented foods. Adoption of modern food technological principles in temps of ingredients, processing and packaging technology to deliver consistent quality, shelf stability and regulatory compliance to Indian traditional foods is a challenge for food scientists and technologists.
