My research aims to address issues related to food processing, safety, security and sustainability of indigenous African cereals. Currently, I am looking at ways of improving the utilisation of pearl, finger and fonio millet and developing value added products from them, at the same time studying the microbiota involved during the fermentation and effect of processing on the conjugated mycotoxins in these cereals.
