I am currently using conventional and molecular microbiology tools to investigate acid stress response and subsequent cross-protection of Escherichia coli O157:H7 to lactic acid, lactoperoxidase system and sub-pasteurization heat treatments in broth, fresh goat milk and fermented goat milk products.
