About me

As a motivated food chemistry researcher with a Ph.D. in Agro- product Processing and Utilization, I am driven by the challenge of addressing complex chemical composition, nutritional value, and food safety and control issues at the intersection of food safety, product development, and sustainability. My research focuses on root/tuber crops: sweet potato, cassava, maize and potato processing and utilization of their by-products. I'm also working on the quality formation and control of sweet potato starch products by identification of adulterated products in the market. I am eager to expand my expertise and contribute to cutting-edge chemical composition and nutritional value of food, leveraging my quantitative skills in an interdisciplinary mindset and commitment to sustainable solutions. I thrive in collaborative environments and am motivated to apply my agro- product processing and utilization background to advance my knowledge in food chemistry and nutrition. Dr. Diana has leadership skills and she is committed to the development and implementation of innovative approaches to quality control of processed agricultural products and detect adulterants substance used on the market for economic purposes. Dr. Diana has good problem-solving skills and a strong critical mind and looks forward to building a scientific career and interdisciplinary network.
