I did a pH D. work in Germany and USA using Caco2 cells to assess and evaluate the effect of some herbs rich in polyphenolic compounds and commonly used in Egypt on mineral bioavailability especially Fe, Ca and Zinc.
also, I used the technique of stable isotopes to assess the mineral bioavailability in human ( training course at USA).
