About me

My career and research interests focus on food biotechnology, specifically enhancing the nutritional composition of traditional foods through fermentation, as well as improving microbial value, food security, and safety, particularly in Nigeria. My extensive research aims to develop functional food products from plant-based ingredients and natural preservatives, thereby mitigating malnutrition, postharvest losses, contamination, and dependence on synthetic food additives.
