Gloria Otunola is currently a Professor of Biochemistry (Nutrition and Functional Foods) at the Department of Chemistry, National Open University of Nigeria (NOUN), Abuja Nigeria. Her research is multi-disciplinary, involving the assessment of nutritional composition, bioactive contents, assessment of oral safety (toxicity), as well as formulation and efficacy of functional foods using in vitro and in vivo models, for prevention/management of chronic communicable and non-communicable diseases (especially diabetes, hypertension, obesity and cancer). She teaches at both undergraduate and graduate levels, supervises student’s research projects, writes proposals for grants, funding and research collaborations. Her current research focus is on the development of functional food products (snacks, beverages and supplements) which are at various stages of testing for acceptability and efficacy as well as IP and Patenting assessments.
She has published over 80 articles in peer-reviewed journals, with 57 indexed in Scopus and five (5) book Chapters, spanning: Nutritional and Bioactive Composition of Lesser-known/underutilized indigenous food and medicinal plants; Pharmacological evaluation and translation of Medicinal Plants and Functional foods for chronic diseases (Phytomedicine and Ethnobotany); Formulation and Development of Functional Foods for malnutrition and chronic diseases; Evaluating the efficacy of Medicinal Plants and Functional Foods for the management of chronic diseases (diabetes, hypertension, cancer); Development and functionality of Bio-nanoparticles; Global and Public Health. Gloria is involved in and welcomes consultancy engagements and collaborations at national and international levels for malnutrition and management of chronic diseases.
